Lobster salad with marinated fennel and chunky guacamole Recipe

Use a mandolin or sharp knife to finely slice a  fennel bulb. Put in a bowl and add the 1 tsp tarragon, 1 tsp chervil, 1 tsp dill and a squeeze of lime juice. Add 1 tsp olive oil and season with salt and pepper. Mix well 

Using a fork, roughly mash 1 avocado and add 1/2 minced red onion, 1 finely hacked red chilli, 1 tbsp crème fraîche, 2 tsp hacked fresh coriander and salt and pepper. Finish with the juice of one lime, or to taste

Mix the fennel salad with the meat from a cooked lobster, serve with the guacamole on the side
