Marinated sea bass , avocado, fennel Recipe


Start with the vinaigrette: whisk (per 2 pers.) 2 tbsp oil, 1 tbsp soy sauce, 1 tsp apple vinegar , 1 tsp mirin, the juice and zest of half a lime, 1/2 tsp grated ginger, some finely cut coriander, pepper and half a Granny Smith finely diced.

Slice 2 sea bass fillets very thinly.Season with salt , pepper and lime zest.

Cut the meat of 1 avocado lengthwise. Season with lime juice, lime zest, salt, pepper and olive oil.

Slice some fennel very thinly, season with olive oil, salt, pepper and lime juice.

Start plating with the fish, cover with the vinaigrette. add the avocado and then the fennel.

Finish with trout roe.
