Pre heat the oven at 185 C.
Peel a small celeriac and (best with a mandoline) slice it very thinly, then use a 5 cm service ring to cut out 14 circles. Blanche for 3 mins in boiling salted water, take out and dry.
Mix 20 gr butter with some oregano and 1 pressed clove of garlic.
Take 2 (12 cm) oven dishes and put in the butter mix.
Then the celeriac, half overlapping each other.
Finish with some slices of tallegio cheese and then cover with puff pastry.
Brush with egg yolk and bake in the oven for about 12 mins.
Serve upside down on a plate, decorate with pine nuts, cress and samphire
